The Numbers Behind Kitchen Fires

  • Access panels: Ducts must have access openings at minimum every 12 feet of horizontal run, at every 90-degree turn, and at every vertical-horizontal transition
  • Grease containment: Hoods must capture and contain grease vapors. Filters or baffles required on all hoods
  • Fire suppression: Automatic fire-extinguishing systems (ANSUL, Pyro-Chem, etc.) must be installed in all hoods over cooking equipment that produces grease-laden vapors
  • Exhaust fan: Must be UL 762 listed for grease exhaust. Hinged for cleaning access
  • Duct construction: Minimum 16-gauge carbon steel or 18-gauge stainless steel. No PVC, aluminum, or flexible duct allowed in grease exhaust

Inspection and Maintenance

  • Fire suppression system: Semi-annual inspection by a licensed technician (NFPA 17A)
  • Exhaust system inspection: Per schedule above — quarterly to annually depending on cooking volume
  • Hood filters: Cleaned weekly at minimum for heavy-volume operations

Documentation Requirements

NFPA 96 Section 11.6 requires written documentation of every inspection and cleaning. At minimum, records must include:

  • Date of service
  • Company name and technician name
  • Specific areas serviced
  • Any deficiencies found and corrective actions
  • Recommended: Before and after photographs or video

Records must be maintained on the premises and made available to the fire marshal upon request. No documentation equals no proof of compliance.

Insurance Implications

Commercial property insurers have become increasingly strict about kitchen exhaust maintenance. Key trends:

  • Mandatory documentation: Many insurers now require documented quarterly or semi-annual kitchen exhaust cleaning as a condition of coverage
  • Video evidence preferred: Photographic and video documentation is increasingly specified — written checklists alone may not satisfy policy requirements
  • Exclusion clauses: Some policies now exclude fire damage coverage if NFPA 96 cleaning documentation is incomplete or missing

Fire Suppression System Integration

  13. Is the kitchen exhaust cleaning contractor certified (e.g., IKECA member, NADCA certified)?
  14. Does the cleaning contractor use video documentation equipment?
  15. Are all NFPA 96 records stored both on-premises and in a secure off-site backup?

Scoring: 13-15 Yes = Well protected. 10-12 Yes = Moderate risk, address gaps. Below 10 = High risk, immediate action required.
